Jack Daniel's whiskey is matured in new, charred American white oak barrels, from which the whiskey draws its spicy oak notes and its rich, golden color. The product is crafted according to all of bourbon's quality standards but undergoes the extra step of mellowing drop by drop through 10 feet of hard sugar maple charcoal.
Jack Daniel's is composed of 80% corn, 12% rye, and 8% malted barley, and is distilled in copper stills. It is then filtered through 10-foot (3.0 m) stacks of sugar maple charcoal. The company refers to this filtering step as "mellowing".
